Valentine Warner has always been passionate about the connection between the natural environment and the food we consume. He is the presenter of the BBC 2 cookery programme and cookbook, What to Eat Now. He has chosen a recipe for a healthy, low carbon salad made from kale, a leaf that is seasonal across the coldest months of the year through to early spring.


“Although this might seem an odd combination this is a fantastic salad with a great mineral hit from the kale which goes so well with the un-refinedness of the sugar, the kale must be young and tender as if larger it can be a bit chewy.”
