Chef, business woman, educator and journalist, Prue Leith OBE, has a career which spans over 50 years. In that time she has opened Leith’s, her Michelin Starred restaurant, founded Leith’s School of Food and Wine, served as Chair of the School Food Trust, and been a food columnist for newspapers including The Guardian and The Daily Mail. For Climate Week she has provided a recipe for Ratatouille – a healthy vegetarian dish.
